Processing starts right after harvesting. The coffee seeds are removed from the ripe cherries and then dried. The dry method requires minimal machinery and is the simplest processing method. The ripe cherries are cleaned and sorted either by hand or by floating the cherries in a water tank. The coffee cherries then get spread out either on a large concrete or on matting. It can take about four weeks for the cherries to dry. Finally, the outer layers of the dried cherries are removed, and the dried cherries get stored in silos until they're sent to the mill for hulling.
